What is a "Journée de ressourcement" ? It's a lecture and action planning around a certain topic, correct ?

No, it is a resourcing opportunity where members of an organization or employees can take stock of their business, learn about new approaches and generally reconnect. "Resourcing Day" could cover it. Here are two translators' forums where to ask such questions: www.translatorscafe.com (click on TCterms) and www.proz.com (click on KudoZ tab).

Well, it can be that too. Education can be the whole of the program, or a component of it - it all depends on ther context, which you have told us nothing about - but the idea is that it is a day off to learn new aspects, catch up, take stock, communicate. It can even be a picnic in the park!
